Combine the yogurt, olive oil, honey, garlic, dried herbs, vinegar, salt, lemon zest and a generous amount of black pepper in a large bowl. Add the chicken pieces and stir until coated. Marinate for at least 2 hours, up to 24 hours.
To cook the chicken, shake off most of the marinade and either grill or cook in a cast iron skillet with a splash of oil or cooking spray for 15 minutes, or until just cooked through.
