Wash the radicchio well and cut it into strips.
Soak the radicchio in a bowl with water with a tablespoon each if white wine vinegar and lemon juice for about 30 minutes.
Drain the radicchio well and dry it off gently with a clean towel.
Saute garlic in the olive oil until fragrant and softening.
Add the radicchio and let it cook over high heat for five minutes.
Season with salt and pepper to taste.
Continue cooking for 10 to 15 minutes, stirring frequently, until done as desired.
Adjust seasoning, add any optional ingredients (toasted pine nuts, crumbled feta, grated Parmigiano) away from heat, and serve.
