Cook pasta according to package directions.
While pasta is cooking, blend the tomatoes.
Heat olive oil in a pan over medium heat.
Add onion and cook until softened.
Add garlic and cook for 1 minute until fragrant.
Stir in tomato puree and cook for 1 minute.
Add the blended tomatoes, salt, pepper, and oregano/Italian seasoning.
Bring to a simmer and cook for 5 minutes.
Stir in the double cream and cheddar cheese until the cheese is melted and the sauce is creamy.
Add the cooked pasta to the sauce and toss to combine.
Garnish with fresh parsley.
