Batched Pear French 75s
  1. Combine 1 cup water, 1 cup sugar, pear, sage leaves, and ginger slices in a pot

  2. Heat on medium until sugar dissolves

  3. Simmer for 10 minutes

  4. Cool and strain the pear syrup

  5. Add gin, lemon juice, pear syrup, pear juice, and filtered water to a pitcher

  6. Mix gently and chill in the refrigerator or freezer

  7. When ready to serve, fill each glass halfway with the mixture

  8. Top with champagne or sparkling wine
