Combine 1 cup water, 1 cup sugar, pear, sage leaves, and ginger slices in a pot
Heat on medium until sugar dissolves
Simmer for 10 minutes
Cool and strain the pear syrup
Add gin, lemon juice, pear syrup, pear juice, and filtered water to a pitcher
Mix gently and chill in the refrigerator or freezer
When ready to serve, fill each glass halfway with the mixture
Top with champagne or sparkling wine
