Mix marinade ingredients together: brown sugar, salt, fish sauce, lime juice, minced garlic, minced chilli, coconut vinegar, and lemongrass
Mix marinade with chicken and marinate for at least 1 hour in the fridge
Slightly flatten chicken for even cooking
Add oil to a large cold pan and place chicken skin side down
Place a plate or weight on top and turn heat to medium high
When sizzling, turn heat down to medium and cook for approximately 7 minutes
Remove weight and flip chicken, cook for another 4 minutes or until cooked through
Rest chicken for a few minutes before slicing
Pour over pan juices and spoon over garlic oil
For garlic oil: In a cold pan with oil and sliced garlic, bring to a sizzle for a few minutes until garlic is translucent, then remove
For side salad dressing: Mix brown sugar, salt, coconut vinegar, and mandarin juice together
Dress vegetables and herbs with the dressing
Serve chicken with side salad and rice
