  1. Mix marinade ingredients together: brown sugar, salt, fish sauce, lime juice, minced garlic, minced chilli, coconut vinegar, and lemongrass

  2. Mix marinade with chicken and marinate for at least 1 hour in the fridge

  3. Slightly flatten chicken for even cooking

  4. Add oil to a large cold pan and place chicken skin side down

  5. Place a plate or weight on top and turn heat to medium high

  6. When sizzling, turn heat down to medium and cook for approximately 7 minutes

  7. Remove weight and flip chicken, cook for another 4 minutes or until cooked through

  8. Rest chicken for a few minutes before slicing

  9. Pour over pan juices and spoon over garlic oil

  10. For garlic oil: In a cold pan with oil and sliced garlic, bring to a sizzle for a few minutes until garlic is translucent, then remove

  11. For side salad dressing: Mix brown sugar, salt, coconut vinegar, and mandarin juice together

  12. Dress vegetables and herbs with the dressing

  13. Serve chicken with side salad and rice
