Toast 25g of Jasmine rice over a medium heat until golden brown
Grind the toasted rice in a pestle and mortar and set aside
Finely slice the coriander stem and shallots and pick the herbs
Mix the fish sauce, sugar, coriander stems and 2 tbsp of toasted rice powder together to make the dressing
Season the dressing to taste with lime juice
Heat a large wok or frying pan over a medium heat and cook the pork mince in 1 tsp of cooking oil until just cooked through
Mix everything in a large mixing bowl and taste for seasoning, adjusting fish sauce, lime, or sugar as needed
Plate up with steamed rice and lettuce leaves
Top with more toasted rice and chilli
Wrap in lettuce leaves and serve with cucumber slices and lime wedges
