Roasted Acorn Squash And Goat Cheese Dip
  1. Preheat the oven to 425F.

  2. Half the squash and scoop out the seeds.

  3. Place on a roasting pan and rub with olive oil, apple cider vinegar, thyme, and salt & pepper.

  4. Roast for 40 mins.

  5. Remove squash from the oven and let cool.

  6. Scoop squash flesh into a food processor.

  7. Add goat cheese, maple syrup, and salt & pepper.

  8. Blitz together until smooth, drizzling in some extra olive oil if you want.

  9. Try it and adjust seasoning to taste.
