In a mixing bowl combine sweetcorn, spring onions, grated halloumi, salt, pepper, garlic, plain flour and cornflour along with eggs. Mix well ensuring all components are combined.
If it's a little dry, gradually add a touch more water until it's sticky and can slowly fall off the spoon. If too overly liquidy, gradually add in 1 tsp of plain flour mixing in between until you get the sticky consistency.
On medium to high heat, fry spoonfuls of the mixture for 1.5 minutes on each side. Drain any excess oil. For the hot honey, combine honey and chilli flakes and allow it to bubble over low heat. Drizzle it all over your sweetcorn halloumi fitters, garnishing with red chilli's
