Preheat oven to 325°F (165°C)
Line a baking sheet with parchment paper
Grate zucchini finely
Squeeze out excess moisture using a clean kitchen towel
Combine zucchini and olive oil in a bowl
Add almond flour and Parmesan
Stir in sesame seeds and seasonings
Mix until a soft dough forms
Place dough between two sheets of parchment
Roll very thin, about ⅛ inch thick
Remove top parchment carefully
Cut into small squares using a knife or pizza cutter
Bake 25–30 minutes until golden and crisp
Cool completely before breaking apart
