For the batter, crack the eggs into a bowl and beat them with an electric whisk. Add the flour and baking powder, and continue beating. Season, pour in the sparkling water, and continue beating. Let it rest while you prepare the squid.
Separate the head from the body of the squid. Remove the quill and fins (also removing the skin) from the body. Turn the squid inside out and rinse it well inside and out. Remove the beak from the head and separate the tentacles and the "tie." Rinse everything well. Cut the body into rings, the tentacles into pairs, and the fins into strips.
Season the squid, dip them in the batter, coat them well, drain excess batter, and briefly fry them in a pan with plenty of hot oil.
Remove and drain them on a plate lined with paper towels. Serve and accompany them with lemon wedges. Garnish the plates with parsley leaves.
Tip: Today we've accompanied our fried squid with lemon wedges, but you can also serve them with sauces like mayonnaise, aioli, cocktail sauce, or tartar sauce.
