Add your cheddar to a greased muffin tin and top with remaining ingredients + another layer of cheddar on top.
Bake @ 400F for 20 mins.
Take out once the cheddar crisps up, let cool until it hardens & enjoy!
For the spread: Mix ½ cup mayo (or plain yogurt for less calories), 3 tbsp sugar free ketchup, 1-2 tbsp dill relish, a splash of white vinegar, and a pinch of salt & paprika.
