Rub olive oil over chicken breasts & season with salt and pepper.
Heat the grill to medium-high heat (375-450°F) and coat the grates with oil to prevent sticking.
Place the chicken on the grill and cook for 6-8 minutes.
Spray olive oil on opened ciabatta buns & grill on low. Remove once golden.
Flip each piece and continue cooking another 6-8 minutes (about 12-15 minutes total), until cooked through. Remove once cooked & allow resting.
Toss lettuce & parmesan in Caesar dressing. Top open ciabatta buns with the salad mix.
Slice & top sandwiches with grilled chicken & serve.
