Add 2 tablespoons olive oil to a zip bag or container
Zest 1 lemon directly into the bag, scraping all zest from the bottom
Add 2 tablespoons fresh lemon juice to the marinade
Add 2 cloves grated garlic to the mixture
Add 1 teaspoon dried oregano
Add ½ teaspoon salt
Add ¼ teaspoon black pepper
Whisk or shake the bag to combine all marinade ingredients
Add 1–2 lbs chicken breasts to the bag
Release air from the bag and seal it closed
Shake the bag well to coat the chicken with marinade
Refrigerate for 20 minutes
Cook the marinated chicken in a pan with 1 tablespoon olive oil for approximately 15 minutes
