Blitz all the marinade ingredients together, and combine with the chicken.
Marinate overnight in the fridge or 2 hours minimum.
Preheat oven to 240C roast.
Line baking tray with cut spring onion and lay chicken on top.
Cook for 18-20min until chicken is cooked through, serve with pan juices.
Enjoy with rice and veggies or store in the fridge as meal prep.
