Chop the carrots, onion, and garlic.
In a large pot, heat the olive oil over medium heat.
Add the chopped carrots, onion, and garlic. Sauté for 5-7 minutes until softened.
Add the vegetable broth and season with salt and pepper.
Bring to a boil, then reduce heat and simmer for 20-25 minutes until the carrots are very soft.
Blend the soup using an immersion blender or regular blender until smooth.
Serve hot.
