Preheat air fryer to 400°F
Husk corn and cut into 4 pieces lengthwise
Mix olive oil with the seasonings (salt, smoked paprika, chipotle chili powder, garlic powder, and black pepper) and brush onto corn ribs
Air fry for 10 minutes, flipping halfway through
While corn is cooking, prepare the elote sauce by mixing mayonnaise, sour cream, lime juice and zest, salt, chipotle chilies in adobo, garlic powder, smoked paprika, and black pepper
Once corn is cooked, slather the sauce over the corn ribs
Crumble Cotija cheese on top and sprinkle with cilantro
Serve and enjoy
