Pumpkin Tres Leches
  1. Preheat oven to 350 and grease a 9x13 baking pan.

  2. Mix pumpkin puree, eggs, sugar, vanilla extract and oil in a bowl. Mix then add flour, baking soda, baking powder, cinnamon, pumpkin pie spice, and salt.

  3. Pour batter into pan and bake for 30 minutes. Remove and let cool for 15 minutes.

  4. Mix the evaporated milk, heavy cream, and condensed milk in a bowl. Once combined, poke multiple holes all over the cake and pour the entire wet mixture onto the cake. Cover and let soak for at least 8 hours. I actually ate this immediately and it was amazing. But you're supposed to wait!

  5. Frost the cake with whipped cream by mixing heavy cream and confectionate sugar. Mix for 5-7 minutes until stiff peaks are formed. Use a sifter to sprinkle cinnamon on top for decoration.
