Make the sauce by combining the sesame paste, peanut butter, soy sauce, black vinegar, sesame oil, sugar, grated garlic, grated ginger, salt, msg, and chili oil in a bowl. Add the hot pasta water and mix well.
Toss the fresh flour noodles with the sauce.
Top with julienned cucumber, green onion, crushed peanuts, and more chili oil if desired.
