To make garlic confit, slice off and discard the garlic top, completely cover in aluminum foil, drizzle olive oil into a foil envelope, and roast for 400 degrees for 1 hour. Keep the oven on as you continue to prepare the garlic bread.
Squeeze roasted garlic into a medium-size bowl, add a stick of softened butter, diced serrano peppers, Calabrian chilis, parmesan cheese, chili flakes, cilantro (or parsley), then mix with a fork until fully combined.
Cut your French bread loaf lengthwise, place on top of a baking sheet, spread butter mixture to both halves of bread.
Bake in a 400-degree oven for 10 minutes. Remove bread, top with mozzarella cheese. Continue to bake for another 4-5 minutes, or until the cheese is melted and bubbly. Garnish with more Parmesan cheese and fresh chopped cilantro or parsley. Serve warm and enjoy!
