Into a bowl add your chicken thighs and the following seasonings 1 Tbsp Gochujang, 15g Honey, 1 ½ Tbsp Brown Stevia, 1 Tbsp Soy Sauce, 2 Garlic Cloves finely minced, ½ Tbsp Onion Powder, 1 Tbsp Garlic Powder, 1 Tsp Salt and Black pepper.
Mix well and spray your baking sheet. Place the thighs and bake or air fry at 400F for 14-16mins.
Broil for 3-5mins to achieve desired color/char on the thighs.
Thinly slice cucumbers and throw them into a container with a lid.
Add the following seasoning 1 Tsp Minced Garlic, 1 Tsp Brown Stevia, 5ml Sesame Oil, 5ml Soy Sauce, Pinch of Gochugaru or chili powder, Salt and Pepper, 1 Tsp Garlic powder, Green Onions.
Close and shake until even coated.
Separate the chicken and cucumber salad into 3 even servings, add 125g of rice, garnish with green onions and enjoy!
