Heat oil in a large frying pan or wok over high heat. Add chicken mince and cook, breaking up the mince with a wooden spoon, for 3-4 minutes or until starting to brown.
Meanwhile, combine the teriyaki sauce and water in a jug.
Add ginger and garlic to the mince mixture and stir-fry for 30 seconds or until aromatic. Push the mince to one side of the pan. Add eggs to the other side and cook, breaking up the eggs to scramble, for 1 minute or until firm. Add frozen vegetables and rice to the chicken mixture. Stir-fry for 3-5 minutes or until vegetables are heated through.
Add the sauce mixture to the rice mixture and stir-fry for 1-2 minutes or until well combined and heated through. Divide fried rice among serving bowls. Sprinkle with shallot, to serve.
