TangzhongStep 1: Prepare the Tangzhong
Combine IngredientsIn a small saucepan, whisk together the milk, water, and bread flour.
Cook MixtureCook over medium heat, stirring constantly, until the mixture thickens into a smooth paste.
Cool CompletelyRemove from heat and let cool completely.
Make DoughStep 2: Make the Dough
Mix IngredientsIn a large bowl or on a work surface, mix the all-purpose flour, bread flour, sugar, and yeast.
Knead DoughCreate a well in the center and add the eggs, bourbon vanilla paste, and warm milk. Knead until the dough begins to form.
Knead DoughAdd the cooled Tangzhong and salt, then knead for about 10 minutes until smooth.
Incorporate ButterStep 3: Incorporate the Butter
Add ButterGradually add the soft butter, kneading continuously until fully incorporated. The dough may seem sticky at first, but keep kneading—it will become smooth and elastic.
Rest DoughCover with a clean towel and let rest for 20 minutes.
Add SugarStep 4: Add the Pearl Sugar & Shape the Dough
Fold SugarGently fold the French Pearl sugar into the dough until evenly distributed.
Shape DoughShape the dough into a round loaf and place it on a parchment-lined baking sheet.
Proof & BakeStep 5: Proof & Bake
Let Rise. Cover loosely and let the dough rise in a warm place for 1-2 hours, or until doubled in size.
Preheat Oven: Preheat the oven to 180°C (350°F).
Prepare Dough: In a small bowl, mix the egg yolk and milk, then brush it over the dough. Sprinkle with caster sugar.
Bake for 25 minutes, or until golden brown. If the top browns too quickly, tent with aluminum foil halfway through baking.
Let cool slightly before slicing and enjoy warm.
