Peel apples until they're fully naked! Place them in a freezer bag and freeze overnight until completely hardened.
In a small sauce pan add brown sugar, miso, and whiskey. Bring to medium high heat and continuously mix as it begins to cook until moderately bubbling and syrupy, about 3-5 minutes. Remove from heat, pour into a heat proof container, and set aside.
Finely chop peanuts. In a bowl, finely grate frozen apples with a microplane (if your hands get too cold, just place a paper towel between your fingers and the microplane) until you've filled the bowl. Add a drizzle of whiskey caramel over the shaved apple ice. Top with chopped peanuts and black sesame. Eat immediately!
