Bloom the gelatin by soaking in cold milk to soften.
Using a knife, slice the vanilla bean lengthwise. Scrape out the vanilla seeds from the pod. In a medium saucepan, add all of the ingredients including the vanilla bean and seeds.
Heat on medium heat for about 10 minutes to allow all of the flavors to infuse.
Dissolve the gelatin in the hot mixture.
Allow to sit for 10 minutes to fully hydrate.
Pass the mixture through a sieve to remove the vanilla pods and any undissolved matter.
Reserve the pods for making vanilla powder or extract later.
Pour the liquid into your molds or bowls. Allow them to chill refrigerated overnight.
Unmold the panna cotta onto your serving plates. You can slightly warm the bowl in water to assist.
