Set cream cheese to room temperature (or heat quickly with a rice pack if needed)
Mix room temperature cream cheese with powdered sugar in a mixer or with an electric hand mixer until super thick
Flavor the mixture with peppermint (or any flavor of choice)
Roll the dough into balls or logs
Cut into bite-size pieces or press with the tines of a fork to create texture
Add food coloring to dye the mints in desired colors
Let the mints sit at room temperature until they dry out
