Bombay Vada Pav With Garlic Chutney
  1. Prepare the Vada Filling: In a pan, heat oil. Add mustard seeds, ginger-garlic paste, green chilies, turmeric, curry leaves and mashed potatoes. Mix well, season and add coriander.

  2. Make the Batter: In a bowl, mix gram flour, spices, salt, and water to make a smooth batter. Dip potato balls in the batter and fry until golden.

  3. Garlic Chutney: Grind garlic, coconut, red chilli powder, churra and salt. Grind to a coarse powder.

  4. Assemble the Vada Pav: Slather green and garlic chutney on pav (bread rolls), place a vada and chilli in between, squeeze and enjoy!
