Preheat oven to 300°F. Line baking sheet with parchment paper. Separate eggs into two bowls
Add cream of tartar to egg whites and beat with mixer until stiff peaks form
Combine egg yolks, blended cottage cheese, salt, and optional ingredients until smooth
Gently fold whipped egg whites into yolk mixture in thirds, maintaining as much air as possible
Scoop mixture onto prepared baking sheet, forming 6-8 rounds. Shape evenly with back of spoon
Bake for 25-30 minutes until golden brown. Let cool completely on baking sheet
