Chop the onion and parsley in a food processor and squeeze out the juice.
Put the ground meat, onion, and spices into a mixing bowl and knead well.
Spread the mixture onto a baking tray lined with parchment paper, then cut into long strips using a knife or spatula, leaving space between each.
Line the edges of the tray with tomatoes and peppers.
Add salt and olive oil on top.
Bake in a preheated oven at 220°C (top and bottom heat) for 15 minutes.
Then switch the oven to the top grill setting and lightly brown the kebabs without drying them out.
If the vegetables don't brown to your liking, you can transfer them to a separate tray and grill
