preheat oven to 375
blend tofu, cream cheese, olive oil, lemon juice, sugar, garlic, and salt.
cook sausage in skillet, breaking down big chunks. drain grease
prepare a 9x12 glass dish with a bit of olive oil/cooking spray, followed by a little pasta sauce
layer up the lasagne sheets, pasta sauce, and tofu blend
top with vegan shredded mozzarella (optional)
cover with foil, bake for 25 minutes
bake an additional 5 minutes uncovered
remove from oven, rest about 5 minutes or until it smells so good you have to have some immediately
top with parmesan or nutritional yeast, or both if you're indecisive
serve with breadsticks, salad, whatever your heart desires, understanding that anything on the table next to this lasagna will never even dream of holding a candle to it
