Spicy Bean Burger
  1. Grate 1 tomato and finely dice 1 tomato, 1 red onion and a handful of coriander.

  2. Chargrill or fry corn until golden and crispy and mix all together with a generous pinch of salt.

  3. Soak cashews in hot water for 30 mins and blend in a high powered blender with 1 tsp vinegar, 1 tsp Dijon mustard, ½ tsp salt and a squeeze of lemon juice with a splash of water.

  4. Layer up your burger bun with the sour cream, lettuce, avocado, the burger, more sour cream and the salsa.
