Magic Tomato Salad
  1. Wash and chop the tomatoes into bite-sized pieces. Peel and dice the cucumber. Thinly slice the red onion. Tear the basil leaves into smaller pieces.

  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey (if using), salt, and pepper until well combined.

  3. In a large mixing bowl, gently toss the tomatoes, cucumber, red onion, and basil with the dressing.

  4. If you like, add crumbled feta or fresh mozzarella for a creamy texture and extra flavor.

  5. Sprinkle some chili flakes or fresh parsley on top if you want a little extra heat or freshness.

  6. Let the salad sit for about 10-15 minutes in the fridge to let the flavors meld together. Serve chilled or at room temperature.
