Chicken Noodle Soup (miến Gà Inspired)
  1. Dry-fry onion, spring onion, garlic, and ginger until lightly charred

  2. Add chicken broth, soy sauce, mirin, fish sauce, sesame oil, palm sugar, and coriander roots. Simmer gently

  3. Marinate chicken with garlic, soy sauce, fish sauce, and honey

  4. Pan-fry chicken until golden and cooked through, then slice

  5. Gently fry finely chopped garlic in neutral oil until just golden. Strain, let garlic chips air-dry, then return to the oil

  6. Cook rice noodles and ramen separately. Blanch bok choy

  7. Strain broth. Divide noodles and bok choy into bowls, top with chicken, ladle over broth

  8. Finish with spring onion, chives, chilli oil, coriander, and garlic oil
