Using a mortar and pestle, crush the sunflower seeds finely, until they are about one-quarter of their original size and the texture of coarse bread crumbs.
In a medium bowl, combine the ground sunflower seeds, hemp hearts, flaxseeds, sesame seeds, oregano, dried minced onion, pepper flakes, and sumac.
Set a small stainless steel pan over medium heat and add the sesame oil. Let this heat up until fragrant, a minute or so. Add the seed mixture and cook until the seeds begin to smell nutty and the sesame is golden brown, 2 to 3 minutes.
Transfer to a bowl and add 1 teaspoon salt. Funnel it into a jar, cover, and keep it in a cool, dry place for up to 1 month.
