Loaded Black Bean Tacos
  1. Heat olive oil in a skillet and cook onion until soft. Add garlic and spices. Stir in tomato paste. Then add beans and mash about one-third of them for creamy texture. Finish with lime juice. The filling should be thick, smoky, and glossy.

  2. Warm tortillas slightly so they don’t crack. Add cheese, black beans, more cheese; fold the tortillas and place on a parchment-lined sheet pan. Brush or spray lightly with oil.

  3. Bake at 425°F (220°C) for about 8 minutes. Flip and continue baking for another 6–8 minutes until deeply golden and crispy. The cheese should bubble at the edges.

  4. Top with fresh salsa, guacamole, pickled onions, cilantro and lime wedges. Enjoy!
