Place chicken and chicken broth in your crockpot. Add in your sun-dried tomatoes, basil, garlic powder, red pepper flakes, salt and pepper. Cover and cook on high for 3 hours or low for 6 hours.
Gently shred the chicken using a hand mixer. Don't overdo the shredding, you want the chicken in chunky pieces!
Stir in heavy cream and Parmesan cheese. Then add in about ¾ of a 1 lb box of ditalini noodles. Cook on high for another hour.
Serve warm and top with more parmesan cheese.
