Prepare the Dough
In a mixing bowl, combine grated carrots, all-purpose flour, mozzarella cheese, Parmesan cheese, parsley, garlic powder, salt, and black pepper.
Gradually add water, a little at a time, and knead until a soft dough forms.
Shape the Flatbreads
Divide the dough into 4 equal portions and roll each into a ball.
Flatten each ball into a thin disc using a rolling pin or your hands, about ¼ inch thick.
Cook the Flatbreads
Heat a tablespoon of olive oil in a skillet over medium heat.
Cook each flatbread for 2–3 minutes on each side until golden brown and cooked through. Add more oil as needed between batches.
Serve
Serve warm with your favorite dip, such as yogurt sauce or marinara.
