Flourless Lemon Cottage Cheese Snack Cake
  1. Preheat oven to 350°F (175°C). Grease an 8-inch square baking pan or line with parchment paper.

  2. In a large bowl or blender, combine cottage cheese, honey, eggs, lemon juice, lemon zest, vanilla extract, baking powder, and salt. Blend until completely smooth and creamy.

  3. Stir in the cornstarch until fully incorporated and the batter is smooth.

  4. Pour the batter into the prepared pan and smooth the top. Bake for 25–30 minutes, until set and a toothpick inserted in the center comes out clean.

  5. Let the cake cool in the pan for a few minutes, then transfer to a wire rack to cool completely before slicing.
