Shrimp Ceviche
  1. First, clean, devein, and prepare the shrimp by chopping it into ½ inch pieces.

  2. Place shrimp, lime juice, and salt in a large bowl, cover with plastic film, and marinate in the fridge for at least 30 minutes up to 2 hours. The shrimp will change to an opaque pink-orangey color.

  3. Drain the lime juice, marinating the shrimp from the bowl, leaving just a couple of tablespoons for the liquid to keep the shrimp moist.

  4. Stir in the chopped tomatoes, peppers, onion, and cilantro. Taste for saltiness and season with more salt if needed. Let the mixture marinate in the fridge for about 10 minutes.

  5. To Serve, fill cocktail glasses or small individual bowls with the shrimp ceviche. Garnish with dice avocado and a drizzle of olive oil. Serve with saltine crackers, tostadas, or tortilla chips.
