Crispy Balsamic-thyme Potato Torte
  1. Preheat your oven to 375°F (190°C).

  2. Lightly grease a 9-inch round cake pan or oven-safe skillet with olive oil or non-stick spray.

  3. In a large bowl, toss the sliced potatoes with olive oil, melted butter, balsamic vinegar, garlic powder, salt, pepper, and thyme leaves until evenly coated.

  4. Arrange the potato slices in the prepared pan, overlapping them slightly in concentric circles to create layers.

  5. Repeat layering until all the potatoes are used, pressing down lightly to compact them.

  6. Cover the pan tightly with aluminum foil and bake for 45, or until the potatoes are tender.

  7. Remove the foil and increase the oven temperature to 425°F (220°C).

  8. Bake for an additional 20–25 minutes, or until the top is golden and crispy.

  9. If desired, sprinkle grated Parmesan cheese over the top in the last 5 minutes of baking for a cheesy crust.
