Ingredients

  1. Fill pot with everything and add water until it covers the chicken and cook for about an hour

  2. Remove the chicken shred the chicken, throw away the onion and celery

  3. Broil all the vegetables in the oven until they are toasted

  4. Blend all the roasted vegetables and garlic with cilantro and spinach with chicken broth

  5. Add the blended vegetables to the broth with hominy and cook for 35 mins without the chicken

  6. Try the flavor of the broth for salt, if bland the add consume 2 tablespoons

  7. Add back the shredded chicken to pot
