Mushroom Soup
  1. Sauté onions and garlic in butter

  2. Add chopped mushrooms to the pot and cook down

  3. Deglaze with white wine and add flour

  4. Cook flour mixture for 3-5 minutes then add stock

  5. Add thyme, cover and let simmer for 30 minutes

  6. Add Worcestershire sauce, cream, and soy sauce

  7. Season with salt and pepper to taste

  8. Slice bread into squares and toast with olive oil until crisp

  9. Finish croutons with parmesan

  10. Serve soup with croutons, additional mushrooms, and cream
