  1. Preheat Oven: Preheat to 230°C.

  2. Prepare Cream Cheese: Soften at room temperature. Place in a mixing bowl.

  3. Mix Sugar and Vanilla: Add sugar and vanilla seeds (or extract). Mix until smooth.

  4. Add Cornflour: Sieve in cornflour and mix well.

  5. Add Eggs: Add eggs one at a time, whisking well after each.

  6. Add Heavy Cream: Pour in cream and whisk until smooth.

  7. Sieve the Batter: Sieve once or twice.

  8. Prepare the Pan: Line a 15cm pan with parchment. Pour in the batter.

  9. Bake: Bake at 230°C for 20 minutes. Turn off the oven, open the door, and leave cheesecake inside for 10 minutes.

  10. Cool and Serve: Cool to room temperature, then refrigerate.

  11. Crème Brûlée Topping (optional): Sprinkle sugar on top, caramelise with a torch, and let cool.
