Ingredients:
Preheat Oven: Preheat to 230°C.
Prepare Cream Cheese: Soften at room temperature. Place in a mixing bowl.
Mix Sugar and Vanilla: Add sugar and vanilla seeds (or extract). Mix until smooth.
Add Cornflour: Sieve in cornflour and mix well.
Add Eggs: Add eggs one at a time, whisking well after each.
Add Heavy Cream: Pour in cream and whisk until smooth.
Sieve the Batter: Sieve once or twice.
Prepare the Pan: Line a 15cm pan with parchment. Pour in the batter.
Bake: Bake at 230°C for 20 minutes. Turn off the oven, open the door, and leave cheesecake inside for 10 minutes.
Cool and Serve: Cool to room temperature, then refrigerate.
Crème Brûlée Topping (optional): Sprinkle sugar on top, caramelise with a torch, and let cool.
