Preheat oven to 350°F, then line a loaf pan with parchment paper and grease.
In a large bowl, mix together the bananas, eggs, cottage cheese, maple syrup and vanilla until smooth.
Add in the almond flour, baking soda and cinnamon and mix until fully combined.
Pour the batter into the loaf pan and bake about 50 minutes, covering with foil after 30 minutes if the top starts to brown.
Remove from oven once cooked (after sticking a toothpick in to test) and allow the bread to cool for 10 minutes before removing onto a wire rack.
Let the bread rest for a bit longer before slicing.
