Classic Slow Cooker Pot Roast
  1. Pat the chuck roast dry.

  2. Rub with salt, pepper, garlic powder, onion powder, and 1 tbsp Worcestershire sauce.

  3. Heat olive oil in a large skillet over medium-high heat.

  4. Sear the roast 3–4 minutes per side until deeply browned.

  5. Add onion, garlic, potatoes, and carrots to the bottom of the slow cooker.

  6. In a bowl or measuring jug, whisk together beef broth, tomato paste, 1 tbsp Worcestershire sauce, thyme, and rosemary.

  7. Pour over the vegetables.

  8. Add bay leaves.

  9. Place the seared roast on top of the vegetables.

  10. Cover and cook: Low: 8–10 hours, High: 5–6 hours.

  11. Transfer the roast and vegetables to a platter and keep warm.

  12. Remove bay leaves.

  13. Pour the cooking liquid into a saucepan, or use the slow cooker insert if stovetop-safe.

  14. Mix cornstarch and cold water into a slurry.

  15. Bring the liquid to a simmer and whisk in the slurry.

  16. Cook 2–3 minutes until thickened into a glossy gravy.

  17. Slice or shred the pot roast.

  18. Spoon gravy over the meat and vegetables.

  19. Finish with chopped parsley or thyme.
