High Protein Baked Apple Fritters
  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.

  2. Add the diced apples, coconut sugar, and cinnamon to a large bowl. Toss to coat.

  3. Add the flour, protein powder, baking powder, and salt. Stir to distribute the dry ingredients throughout the apples.

  4. Add the Greek yogurt and gently fold together until a thick, scoopable batter forms. Avoid overmixing.

  5. Divide the batter into six large fritters on the prepared baking sheet, leaving space between them. Gently flatten each one slightly, keeping the edges a little uneven.

  6. Bake for 18–22 minutes, or until the fritters are set in the centers and lightly golden.

  7. Let cool for 5–10 minutes.

  8. Meanwhile, whisk together the powdered monk fruit, 2 teaspoons of milk, and vanilla extract. Add more milk a little at a time as needed until the glaze is thick but drizzleable.

  9. Drizzle the glaze over the fritters and enjoy!
