Crisp & Refreshing Lemon Blueberry Mocktail
  1. First, make the blueberry simple syrup. Combine the coconut sugar, water, and blueberries in a saucepan. Bring the mixture to a boil, then lower the heat and let it simmer for about 10 minutes until thickened.

  2. Strain the liquid into a bowl, leaving the blueberries behind. Press down on the blueberries using a spoon to get as much of the juice out of them as you can. Pour the syrup into a mason jar and let it cool. You can save any extra in the fridge for more mocktails (it makes enough for about 6).

  3. Next, add some ice to a cocktail shaker along with 2 oz fresh squeezed lemon juice and 2 oz blueberry simple syrup. Shake for 30 seconds.

  4. Fill a glass with ice, then pour the lemon blueberry mixture into the cup. Fill it up the rest of the way with the lemon or lime sparkling water. Garnish with more blueberries and a slice of lemon. Enjoy!
