Preheat oven to 180/200c fan
Lay the artichokes out onto a lined baking tray, season generously with olive oil and salt, spread out as much as possible on the tray (or roast on 2 trays) and roast in oven for about 40 mins or more until they are superrrrr golden and crispy round the edges
Meanwhile, gently heat the butter in a frying pan until melted and it begins to froth and brown. Keep stirring to avoid it burning and when it starts to turn darker in colour, add the hazelnuts, rosemary, chilli, salt and balsamic vinegar, give it a stir altogether then take the heat off
When the artichokes come out of the oven, scatter some fresh parsley all over, along with the hazelnut mix , toss together really well whilst still on the baking tray then plate up high on a platter!
