Start by blanching the cauliflower in boiling salted water for 12 minutes.
Remove from water and let it drain (well).
Drizzle the cauliflower with olive oil and season with salt. Place it in a 180°C oven for 25 minutes.
While the cauliflower is in the oven, you can make the cheese sauce. Start by melting the butter in a pot. Once it's foaming, add the flour and cook it out for 3-4 minutes.
Then, add the milk and whisk until you have a smooth white sauce.
Add 80% of your grated cheese and over a low heat whisk until it's all incorporated.
Pour this over the cauliflower and top with the remaining cheese.
Place this back in the oven on the grill setting and grill until golden brown.
