Crispy Rice Salad
  1. Preheat oven to 200°C.

  2. Spread rice on a lined tray, drizzle with soy and oil, toss to coat.

  3. Bake 20–30 mins until golden and crispy. Let cool slightly and break apart.

  4. Whisk dressing ingredients until smooth.

  5. Add all salad ingredients to a bowl, top with dressing and crispy rice.

  6. Toss and enjoy!
