Add ground meat with chopped parsley, tomato paste and spices in a bowl
Grate an onion and squeeze out its juices, then add it into the bowl with minced garlic before mixing
Cut pitas in halves and stuff them with cheese (optional) and the meat
Sear the Arayes with olive oil on a medium heat pan on all sides
Cook them in the oven at 350F for 10 minutes (skip if made thinner)
Slow cook garlic, shallots, and sesame seeds in a low heat pot for 30 minutes to make a confit
Combine greek yogurt, garlic confit and shallot confit with chopped parsley and salt
Finish with olive oil, chilli oil, sesame seeds and more parsley
